Azuki Beans also known as Adzuki or Aduki beans are a small reddish-brown beans with a sweet, intense flavour grown throughout East Asia, especially Japan and China. May contain up to 29 different types of antioxidants, making them one of the most antioxidant-rich foods available. They are rich in protein, fibre, vitamins, minerals and beneficial plant compounds. High level of Potassium found in Azuki beans may help improve digestion and detoxification.
Highly versatile and can be used in sweet or savoury dishes like pies, rice bowls, stews or salads. Due to his sweet flavour, it makes great jam as well.
Like other beans, it is important to soak them for 8 to 10 hours before cooking, preferably overnight.
Bring to a boil and simmer for 45–60 minutes, or until the beans are tender.
