Barley belongs to the grass family and produces a barley grass whose excellent nutritional properties have been studied for decades. To produce barley grass, the seeds must be placed in an even layer on the ground or in the appropriate sprouter and wetted daily until the grass is at least 20 cm high. Like other grass from grains if cut and squeezed with special equipment barley glass produces an intense, strong flavoured green juice which is great when mixed in juices, smoothies or soups.
Soak in water for minimum 8 hours, preferably overnight. Rinse and arrange evenly in one layer over sprouting dish allowing grass to grow up to 20cm. Wet 2-3 times a day over the course of 3 to 14 days. Rinse before consuming and refrigerate after use.
