Black beans are specific kind of beans of excellent taste. Ideal in combination with other cereals and rice for a substantial meal. For more aromatic flavours, you can add spicy herbs such as rosemary, thyme and oregano. For spicy taste add a touch of garlic and pepper.
Soak 6 to 8 hours before cooking, preferably overnight. Rinse and place in a large pot. Cover with fresh water and bring to a boil and cook 3 minutes. Reduce heat and simmer, covered, for 60 minutes or until tender.
