Germinated buckwheat sprouts offer abundance of carbohydrates, vitamins and minerals. They contain rutin, a bioflavonoid also known as vitamin P. Germination time is quite long and is taking up to 12 days. The sprout is ready when the black outer layer has almost completely detached from the sprout. The right amount of humidity, heat and light support the fall of the outer layer. Given the size of the seed it is easy for molds to form. Therefore it is necessary to avoid having excess water for the first 5-6 days of germination.
Soak in water for minimum 16 hours. Rinse them and arrange on the appropriate surface like sprouter tray or sprouting jar allowing seed to increase their volume at least 4 times. Germination takes between 10 to 12 days after wihich they can be consumed immediately or stored in the refrigerator for 1-2 weeks.
