Carob (Ceratonia siliqua) is a flowering evergreen tree that is native to warm, Mediterranean regions. The bean like pods of the carob tree contain a sweet pulp and hard, inedible seeds which always weighed the same mass, exactly 0,18 grams without exception, regardless of seed size or storage conditions. In late Antique times, the pure gold coin known as the ''solidus'' weighed 24 carob seeds. As a result, the carat also became a measure of purity for gold.
Pulp of these pods is dried and finely ground into powder, either raw or roasted. Carob powder has incredibly rich, chocolate like flavour and is mostly used as a cocoa substitute in 1:1 ratio. It is also caffein free, coffee alternative.
Substitute for cocoa powder in 1:1 ratio. May be used in both sweet and savory dishes. Most often used in baked goods such as cakes and cookies. Pairs amazingly well with apples, raisins, figs, walnuts and almonds.
