Khorasan is versatile grain. Due to sweet taste, mostly used in baked goods and other dishes such as bread, porridge and side dishes. Although considered as wheat alternative, khorasan has different nutritional profile.
In comparison, khorasan contains up to 40% more protein and much higher levels of vitamins, minerals, amino acids and fat. Great source of vitamins A,B, C and minerals like magnesium and phosphorus. Doesn't contain sugar.
Soak overnight to speed up cooking process. Bring water to boil in 3:1 (water to khorasan) ratio and simmer for around 35 minutes.
When ready, try as a delicious breakfast.
