Millet is an ancient grain that has been cultivated for more that 12000 years ago. Native to Africa where it grows on scarce soil in dry areas. Most commonly used in Europe in form of millet mash.
Hulled millet naturally does not contain gluten, what makes him great gluten-containing grain alternative. Millet is considered to be a grain which causes smallest amount of allergies. Contains high level of dietary fibre which have positive impact on digestive system and it is also alkaline food, meaning that it may help balancing regular pH levels in the body.
Soak for 8-24 hours before use. Boil in water-millet ratio 2,5 to 1.
Hulled millet can be prepared as porridge with dried fruit and nuts. Works very well in desserts such as muffins and granola bars. Can be used as a side dish or cooked in soups and stews.
