Sunflower (Helianthus annuus) is a flowering plant known for distinctive height, flower size and the number of seeds contained in individual flower heads which can go up to 2000 seeds in a single flower. Native to Americas where this plant was worshipped as a symbol of fertility and light. Sunflower seeds are high in polyunsaturated fatty acids (omega 3 and 6), protein, vitamin E and several B vitamins. They are also a good source of fibre, folic acid and minerals such as copper and magnesium.
Interesting fact is that sunflowers are used to clean up radiation. After nuclear disaster in Chernobyl, fields of sunflowers were planted across radiated fields when scientists have discovered that sunflowers can pull radioactive contaminants out of the soil.
Recommended daily intake is up to 2 tablespoons.
Sunflower seeds can be eaten raw as a healthy snack or added to soups, stews, salads and baked goods.
