Millet flour is a beautifully nutritious and good source of protein, essential amino acids and dietary fiber. Millet is also an excellent source of manganese, phosphorus and magnesium. Naturally gluten-free. Colourwise, it looks similar to yellow cornmeal.
Use millet flour as you would all-purpose flour and enjoy a lightly sweet flavour and crumbly texture in your baked goods.
Substitute for up to one-third of the all-purpose flour in your favorite recipes to decrease the gluten content and increase the mineral and vitamin content.
