Mung beans are delicate legumes that have a flavour profile similar to peas. Plant variety of peas and lentils legume family. Rich source of nutrients including protein, fiber, iron and magnesium. Since they complement vegetables and grains, they are unavoidable in traditional Asian soup recipes. Can even be sprouted and eaten raw in sandwiches, salads and soups.
Soak overnight and cook for half an hour in boiling water. If not soaked, boil for an hour.
