Sesame seeds are versatile seeds native to Middle East. Their tiny white seeds with a nutty, bittersweet flavour are most often used hulled when they are less bitter than raw ones. It is advisable to crush or ground sesame seeds before use for better digestion. In the same time oils are being extracted to form a tahini paste which is then used as one of the main ingredient in well known hummus spread. Sesame has one of the highest oil contents of any seeds. Nutritionally very high in minerals copper and manganese and are also good sources of calcium, iron, and zinc.
Use these versatile seeds to garnish everything from salads, stir-fried vegetables and Asian noodle dishes to cakes, cookies and breads.
If desired, dry roast before use to extract essential oils and enhance their flavour.
