Soybeans are not only the most popular legume in Asian countries. Being rich in protein (anywhere between 37 and 50%) and vitamins it is an excellent meat replacement in vegetarian and vegan diet. Known for various soy derivatives such as tofu, tempeh, soy milk or soy sauce. For full protein utilization it is advisable to mix soy with grains.
Soy is considered to be one of the oldest cultivated crops in the world, known for more than 4000 years. Native to East Asia, brought to Europe in 18th century.
Soak for minimum 6 to 8 hours before use. Cook in simmering water for 2 hours or until tender.
