Spelt is one of the oldest grains still cultivated today with traces dating back to 7000 BC. Spelt seed produces a speltgrass with excellent nutritional properties. Like other grains, grass cut and squeezed with special equipment produces a deep green juice. Unlike other grains, the flavour of spelt grass juice is very sweet and therefore suitable for those introducing similar ingredients to their diet.
Soak in water for minimum 8 hours, preferably overnight. Rinse and arrange evenly in one layer over sprouting dish allowing grass to grow up to 20cm. Wet 2-3 times a day over the course of 3 to 14 days. Rinse before consuming and refrigerate after use.
