Made from just two ingredients - white rice flour and water, rice Vermicelli noodles are most often found in Asian stores. These versatile noodles can be fried, used in soups, with a variety of sauces. Rice noodles have a very low-fat content and are gluten-free.
Rice noodles have very few calories, contain protein and dietary fibre, and the amount of sugar is negligible. These noodles also contain a very low proportion of carbohydrates and fats. However, it should be borne in mind that the way of cooking can increase fat. For example, if you cook and fry them in the Pad Thai, the fat will rise significantly because the rice noodles absorb the fat of what they are being cooked with. If you want the amount of fat to remain negligible and low, cook them in soups or steamed with vegetables.
