Wheat gluten is also known as seitan. Although it is made from wheat, seitan has little in common with flour or bread. Seitan becomes surprisingly similar to the look and texture of meat when it's cooked, making it a popular meat substitute for vegetarians and vegans.
It is made by washing wheat flour dough with water until all the starch granules have been removed, leaving the sticky insoluble gluten as an elastic mass, which is then cooked before being eaten.
Suggested use:
Mix wheat gluten with lukewarm water until you don't get an elastic mass. Make few rolls out of the mixture and set aside for 10 minutes. Cook in a boiling water until they appear on the surface. Drain cooked rolls, slice them and put back to boiling water for additional 10 minutes.
