Xanthan gum is used for home baking in gluten free recipes to improve the crumb structure and to reduce crumbling. This natural ingredient is produced by fermentation of corn sugar by Xanthomonas Campestris bacteria. This flavourless white powder serves as a thickener, stabilizer or emulsifier and may be used in various gluten free recipes such as dressings, sauces, ice-creams and desserts. Suitable for vegans.
