Yerba mate, also called Paraguay tea is very popular and favourite drink in South America, especially in Agrentina, Bolivia, Brasil, Uruguay, Paraguay and Chile. Obtained from a plant Yerba mate (Ilex paraguariensis) which is indigenous to South America. There are several types of mate teas on the market, with main difference being drying methods. Traditional and most common way is smoke-drying using barbacao tree in the period of 8 to 24 hours. Result is a slightly bitter taste of the final product, mostly due to high content of tannins present in leaves.
Add one teaspoon to a cup. Infuse with freshly boiled water (100°C) for 5 to 10 minutes and strain.
